Network interface absent for Host-Only

How do I get the Parallels ethernet device ("interface") to show up in System Preferences -> Network when using Host-Only?

I have this setup on a much older system with a much older Parallels Desktop, but I don't recall having to do anything special to make the virtual ethernet device show up. I already tried the "+" but there is no parallels interface.
 
There are a zillion devices listed if I type ifconfig in MacOS, but I can't find any documentation as to which is which
 
According to prlsrvctl it isn't bound to a device. How do I fix this?

This logic is disabled for Mac computers with macOS 11+ since Parallels Desktop 16.1.0 due to modern macOS limitations (kernel extension-less network).
The KB article mentioned above has been hidden. Thank you for making us pay attention to it!
 
I managed to create a Network Service for the bridge101 interface by editing /Library/Preferences/SystemConfiguration/preferences.plist
Unsure why Parallels can't do this.
 
So the old method of editing preferences.plist which kinda sorta worked in Ventura (at least for switching service order necessary to get wireguard to work seemingly) doesn't appear to work in Sequoia as it claims the Service is "Not connected". I'm unsure how to resolve this.
