Just installed Minecraft Bedrock (Win 11 in Parallels 20) on my M2 MBP Pro and the game runs fine but I have issues with camera movements. Playing in Coherence or Full screen the sensitivity is very high (with or without "game optimization" for the mouse) but I can be mostly corrected by reducing the Camery sensitivity in the game's controls. The main issue is that I can't spin on myself for more 720° (at the maximum, was less 360° in some tries). Once I reach the limit I just can't turn the camera on a side so this severly limit the movements!
The only mode where I don't have that issue is in windowed mode but I'd rather play fullscreen.
