FYI: updating to macOS 12.5.1 solved the problem for me (updating to parallels 18 did not).
So currently parallels 18 with macOS 12.5.1 seems to be working

Hi everyone,

The problem seems finally solved on my side. I don't know what did the trick between the macOS Monterey 12.5.1 (21G83) update OR the Parallels Desktop 18.0.1 (53056) update, but in the end it now seems to be back to normal.

Does everyone have the same result on their side?

It seems that the issues I was having can be solved by disabling hardware acceleration for applications. I suspect this is the problem you are all having. This is a common problem with Electron apps and Chrome too:
