Can I create a Yosemite Virtual Mac on a MacPro running El Capitan?

I am running El Capitan on the latest Desktop Mac Pro. I am testing Parallels 11 for two weeks in order to ascertain if I can create a virtual Mac running an older system such as Yosemite or Mavericks. I cannot find any information on how to proceed. Lots of information on how to create a Windows machine. Is it possible to create an older version virtual Macintosh in order to use an older printer that will not work with El Capitan. I also have large format printer and I am using ImagePrint 9 which will no longer work on El Capitan. I appreciate any assistance in being able to create a virtual Macintosh operating on an older system so I might utilize my hardware and software that cannot run on El Capitan. Thank you all.

I downloaded the Yosemite file from the app store. When the Parallels window opens it first asks me for a language. Then asks if I want to use Time machine or reinstall OS 10. When I click install OS 10 I'm not given an option for Yosemite. Parallels only gives me the option to reinstall El Capitan. The Article link you supplied in your email does not seem to apply. El Capitan is not giving me any options to install Yosemite which is saved to my internal hard drive. Still could use some help. Thanks.
