Bottom space where hidden dock being hidden on windows VM

Hi everyone,
When in "full" screen mode, in MacOS Big Sur the space where the dock is normally (I have the dock hidden), seems to "disappear", so menus, status bars, etc... when in full screen (even in coherence mode) disappear.

This happens with outlook, Microsoft edge, and other office apps.

I've reinstalled parallel tools, I've updated windows, and am running the official release of Big Sur, not a development edition.

Erm, help?

It's worth saying, the buttons still work when you click on the space that they should be. When you take a screenshot, it magically appears if you TRY and take a screenshot when the application isn't selected. If it is, then nothing.

It's as if the display driver isn't adapting to the hidden nature of the dock as it used to.
