I installed Snow Leopard Server in a Parallels 7 virtual machine and it seems to be running ok. But since I use it mainly as a client, I depend on applications like "preview". It opens pictures, you can actually convert them to other formats, but it doesn't show them - just a blank, grey page. Quicklook on the other hand works alright, which seems odd.
I don't see this using Lion's version of Preview. I don't have 10.6 Server to test but on a 10.6 client on an hackintosh virtual machine, I see what you see. The main window is grey but the Slide Show seems to work fine and also the Sidebar. The issue occurs even if I move prl_video.kext out of the extensions folder or whether or not 3D acceleration is enabled.
