Confusing and I need help! Local vs 'psf networked' for QBooks and MSOffice Win/Mac

So I am new at Parallels and I have so many directory entries! I use Quickbooks and Simply and it is hard to know where to put the data files since I often get 'you are opening a networked company' - which should not be - it should be local. So that's one problem - I simply don't 'get' all the incredible number of psf type directory folders vs the truly LOCAL folders? Can someone help me please?

Whether I'm in Coherence mode or not - I have MS Office for both Mac and Windows. I try to double click a WINDOWS Excel file but it always opens in Mac Excel. How do I get so that Windows files I created with Windows programs open with Windows programs and Mac files with Mac programs?
