I've got a temporary workaround to my networking issue - I've plugged a wireless USB adapter in, set it up in my VM and unbelievably it works!!...

Did this work for you? I thought Mountain Lion was 64-bit kernel only? When I try this it just boots into a 64-bit kernel anyway.

Sadly I think you'll be out of luck for that resolution until Parallels offer an update or workaround. :(
You should be able to resize to a decent resolution - I can get to 1920x1200 on my MacBook Pro using the standard Microsoft Basic Display driver....
Same issue for me :( Works fine in VMWare 4 so hopefully Parallels will give us a workaround/update at some point.
