Install Parallels Tools, and when you are getting warning about driver accept it, (or reinstall Parallels Tools)
I can see problem, when Parallels Tools are installed, Quick workaround is to uninstall Parallels Tools, meanwhile we are looking in problem.
Sorry, I mean disconnect all from Shared Folders , or only Mac disks. Anyway, this is only last cause, Shared Folder driver is running on Windows...
Did you tried to use filemon.exe on Windows side as asked? what access it shows to USB drive?
Did you try to use Bridged Networking?
Actually you can see it, in Disk Management but yo are not able to see as disk, because the most probably it is formatted as HPFS
