But why ssh? You don't need any encryption if it is running locally... FTP is slow. Use the sharing built into Parallels, or set-up SMB or NFS...
It won't pass the VPN connectivitiy onto the OS X system by setting things to Bridged, it will have the VPN go to the XP and the normal connection...
Have you tried making a new VM with a fresh install to see if the issue exists specifically on the current VM or with a Parallels config issue?
