Have you tried to reboot Mac OS X after Parallels installation? Sometimes it is needed to up en02 which is used for host-only networking.
Probably your disk is corrupted. Try to clean its working surface with dry cloth and try again.
pwith, Put your Mac to sleep and wake up - it will enable VT-x feature until next reboot. After reboot you'll have to make sleep/wake stuff again.
