I had the same problem and couldn't explain it. Until I found this thread. I have reverted to the previous build and the problems have gone....
Why don't you keep backups of the VM???? I don't think you can recover from a corrupt hd file, I couldn't. But I religiously backup my VM.
9 out of 10 times Parallels crashes when try do delete snapshots with children, i.e. I have 3 snapshots and select the oldest one and delete it...
