In the absence of any reply I found a user manual online and have set up Snow Leopard Server as a guest OS in Parallels 10 running in Mavericks 10.9.5. It is now set up, and I've tried Convergence Mode (though without running any critical applications yet).

Questions:
- The manual says I should use Configure/Options/Sharing to allow the guest OS to share Dropbox by ticking the relevant box. But that box isn't there! The only thing showing in Sharing is a Share Mac box with two choices - which folders to share, and any Custom folders I want (plus a 'Map Mac volumes...' choice.) Nothing else. The iCloud/Dropbox choice which the user guide shows, just isn't there.
- I want to use a program that works quite well in Snow Leopard, but stutters badly in Mavericks with a lot of crashes. Its Application Support folder - with all my data in - is currently sync'd to Dropbox via symlink. So.. can I EITHER
- sync the Application Support folder in the guest, to an equivalent folder in the host, and from there via symlink to Dropbox (how do I do that?)
- use a symlink from the Application Folder in the guest, direct to Dropbox (but then, wouldn't Dropbox empty everything else out of my host Dropbox as it would 'see' only one thing in the guest Dropbox ... or is there a way to actually SHARE the host's Dropbox without having a separate Dropbox in the guest?)
