Windows 7 Enterprise, Service Pack 1, 64-bit - 4 CPU's, 5GB RAM, varying amounts of video RAM tried.
2006 Mac Pro, 16GB RAM

Works fine shortly after the initial install, and then just quits working after seemingly no change to the Windows environment.

I get the same error after changing from 1 processor to 2 on a Core2Duo MBP.

Try changing the number of CPU's on the VM to less than the maximum available and see if that allows it to run.
