I am trying to run Snow Leopard via Parallels Desktop within Mountain Lion. It tells me that I cannot do this because I don't have server edition. Is it Snow Leopard or Mountain Lion I need server version of?

Why is it that you need to have a server edition & not regular version, since which ever OS X it is referring to, none will be a server to the other.

It's referring to the Snow Leopard Server edition, this restriction is enforced in Parallels (and VMWare) because the Snow Leopard EULA doesn't permit virtualization, but Snow Leopard Server EULA permits, this issue has been amply discussed here in this forum and in other places, if you want more details search for it.

Lion and Mountain Lion don't have these restrictions and can be virtualized.
