How do I do this? The problem is that I cannot get to the "Edit-->Virtual machine" menu because if the VM is stopped, it automatically shuts down. How do I fix both of these things?

Don't double click the linked PVS file. Instead, run Parallels directly.

    Actually

You need to hold down the command key while you double-click the pvs file and continue to hold it down until the configuration window comes up.
You can also open the pvs file with a text editor and change the autostart settings from there.
You can also change the name of your hdd which will throw an error message when you start parallels that it can't find ######.hdd, but will go to the config screen.
