Little snitch has picked up several times that Parallels communicates with servers with various IPs (46.137.80.219, 46.137.85.128, 50.19.126.154 etc..)

There isn't any VM running and its the Parallels Service that starts these communications. I have attached a link to a screenshot. Sometimes I have allowed these communications sometimes I've refused, but it keeps communicating. http://cl.ly/251D233p0G1c1W2O123W

Why is it communicating with these servers?

Those IPs are from Amazon's cloud computing infrastructure, I guess Parallels must use Amazon for checking for updates or more likely for CEP (Customer Experience Program): http://www.parallels.com/support/pcep-en_US

You can turn off CEP via Preferences>Advanced>Feedback.
