Everytime I open Parallels, in the select a virtual machine dialog, there is a virtual machine in the list that no longer exists. How can I get rid of it. It's pointing to a non-existant volume that I don't have on my HD.

Try to find and delete the nonpresent VM in the followed folders: /Library/Parallels or /Documents/Parallels. Also you can try to find it using Spotlight find by specifying VM name in the search box.
