Microsoft Edge still there after uninstall

I have uninstalled all the parallels software today yet for some reason there are remnants of Microsoft Edge (Windows 10) left on my system. All the epub files have been set to open with this by default so all icons have changed to the M.Edge icon. I have followed steps to revert it back to iBooks but the icons are still the same. Also, MEdge is still listed as an option to open these files.

How do i completely remove it?

Hello, did you get this issue only with the epub files? Could you please share with us steps that you've performed in order to resolve the issue?
