I had IE 6 on my virtual XP computer, and I installed IE 7, which has a pretty high res (I think?) icon, that just looks better, and for some reason Parallels is stuck with the old IE icon and I can't change it. I've tried deleting the dock icon and opening it again and it won't work. Is there a cache of the old icon? How do I delete it?

Find your Parallels installation (should be in Home>Library>Parallels>) and find a directory titled 'Windows Applications'. Just find Internet Explorer in that folder and drag it to the trash and empty. Now when Parallels is relaunched and you pull up IE again, it will create a new OS X cache file in that same directory.

Thanks! I have another question, but I don't know if I want to make another topic for it.

I'm trying to keep my desktop clear so the 'flick' when new Coherence windows open isn't as noticable (it'd just be a solid color) but the Parallels Shared Folder icon keeps popping up on the desk top no matter how many times I move or delete it. Is there a way to fix this? I've got the link stored in My Documents, I just want my desktop clear.

Yep. In OS Windows mode, all you need to do to hide the icons of the desktop is to right-click on the desktop and select "View>'Show Desktop Icons'". (It might be something similar to "Arrange Icons By>Show Desktop Icons'" in XP, but I can't remember.)

Just find "Show Desktop Icons" in the contextual menu for the desktop and deselect it and you should be fine.
