I run LR 6 and PS CS6 in macOS Sierra as a guest OS in Parallels 16 running in Catalina on an Intel-based mac-mini. This constitutes pretty much my sole use of the VM and the configuration works pretty well. The one drawback in PS is not being able to turn on hardware graphics acceleration. This doesn't make sense to me inasmuch as the openGL API is available in Catalina even though it is deprecated. While it may not be particularly good for the latest and greatest games (not likely to be running in a VM in any case), it should be good enough for the kinds of things that might be expected to be running in a VM. I can run PS CS6 with OpenGL hardware acceleration on my wife's macBook Pro running el capitan and it works fine.

In general, I would like to see better support and documentation for macOS guests.
