When I have my iPod (nano, 4GB) attached to my computer via the universal dock, which is attached to the back of my Cinema Display (20"), after running Windows my iPod stays 'unmounted'. It doesn't appear in the Disk Utility, and the only way to re-attach it, is to either reboot the mac, or unplug and re-plug the USB connector (or take the iPod out of the dock and put it back in, for instance).

I think that, after 'capturing' USB for the virtual machine (Windows XP Pro SP2), the iPod isn't given back to the operating system.

    Specs:

Mac OS X 10.4.6 on Intel, with all security updates including 2006-003.
    Parallels RC build 1832
Windows XP Professional SP2 (English) with no iTunes or anything like it installed.

Apple Cinema Display 20" with built-in USB hub attached to the right USB port of a MacBook Pro 1.83 GHz.
