I'm running Parallels Desktop 16 on a recent iMac running a fresh Windows 10 installation. I've got a number of volumes attached to the iMac, but I'd only like one or two of them to be visible from within my virtual machine. I've got "Configuration -> Options -> Sharing" set to map Mac volumes checked, but there doesn't seem to be a way to select which volumes are mapped. Is there a way to configure the options to allow this?

Hello, could you please share with us your Parallels Desktop and macOS versions?

Yes, as I said in my original post, I'm running Parallels Desktop 16. My iMac is running Catalina, version 10.15.7.

    Please sorry my bad.
Did you reinstall Parallels Tools and check the issue?
Could you provide us with the VM configuration -> Options -> Sharing tab screenshot please?
