Having the same issue here, only difference is that I already bought PD7.\
After exhaustive researching on the internet, i am pretty sure this annoyance is related to the video-card drivers.

    I have a MBP 15" Late 2011
Graphics AMD Radeon HD 6750M 512 MB
    Software Mac OS X Lion 10.7.4 (11E53)
    - About Parallels: Build 7.0.15104
    (Revision 778994; July 10, 2012)

    The issue is:
Installed Battlefield 2, opened the game, and you can't see the mouse. BUT, even so you can't see the mouse is still there working, and if you move around you can still click on the game buttons and start the game, and use the mouse to play the game even without actually seeing the cursor on screen.
If you disable fullscreen mode for the game, mouse appears just as expected on screen. If you hover it out of the screen it's the window white arrow, and as soon as it hovers back on the game window, the arrow shape is changed back to the game's default.
Also, (as I said I did extensive research on the web) I know this is not the only game affected - lost's of EA stuff have this problem.

What it seems to me is that EA uses some hard coding on their game in order for the game screen stay on top of everything else, in a way to avoid eventual hack softwares to display data on top of the game, and this way the mouse cursor is also not shown on SOME specific combination of video card + driver.
I would gladly present my notebook to someone in Parallels so you can really see what's happening, if you can not recreate the issue inside your labs.

    Hope it's solved fast,
    Thanks!
