I used DataRescue to recover data from a hard drive that was mistakenly erased during a Lion upgrade, trying to recover QuickBooks data (we couldn't get the whole VM). I managed to recover "qbbigger.hdd", a 4+ GB file that may have what I want, but it didn't recover as a full HDD. The .hdd file is there, but it's 0kb, paired with a layer of about 5 subfolders with three unidentified files with arbitrary numbers. One of the those three has the content. Has anyone ever reconstructed an HDD from data recovery like this before? I can provide screenshots if that helps. My description kind of stinks. Thanks!

I suggest you contact Parallels support directly.
Reading this blog might serve you as some assistance, or at least understanding of the .hdd structure: http://parallels-data-recovery-corrupt.blogspot.pt/
