It's actually my old iMac, formatted to NTFS and running Windows 7, but the machine is dying and I'd like to save my setup and port it over to a new computer... but I won't have the new computer for awhile. (New iMac, Parallels install). Or do I just need to back everything up and reinstall when I get a new computer?

The program will install Parallels Desktop 7 on your Mac, your Windows will be stored in Virtual Machine. No need to reinstall all the applications.
Thank you Julia, is the "Switch" edition any different than the regular, Parallels 7 version, or does it just come with the transporter feature now?
One last question... if I use the external hard drive option, does the transporter compress my existing windows before the transfer? And, what file format would the hard drive need to be in order for both the transfer to write to and then the Mac be able to read from?
