20" iMac with 2GB RAM running Windows 7 (release candidate) via Boot Camp with the latest Boot Camp drivers 3.1. Mac OS 10.6.3 with latest updates. The only reason I haven't upgraded system RAM is simply because we don't use Parallels much.

Running Parallels 5 most up to date version.

While running Windows 7 in Parallels many games give us "unsupported video card" error. They work fine when booted into Windows 7 with Boot Camp.

Today I noticed that our Parallels Video Adapter driver seems to be out of date?

    The properties are:

    Driver Date: 11/21/2008

    Driver Version: 4.0.3543 12557

I did upgrade to Parallels Desktop 5 from Parallels Desktop 4.

    Thank you for any suggestions.

I suggest you uninstall the Parallels tools and then re-install them from the latest update.

I did successfully install Parallels Tools and that installed the newer driver.

Is this required for the new driver or can I uninstall Tools now? I don't need the functionality of Tools.

The tools provide the video and sound drivers, and some basic functionality such as:
    _mouse integration
    _timer (PC clock) synchronisation
    _networking
    _shared folders
... which it why I suggest you keep them. You could disable some services if you don't need them (e.g. the Coherence service and the Parallels Tools service) using msconfig.
