Parallels 17 guest Catalina macOS on Monterey

    I'm attempting to install a previous iteration of my Mac Pro in Parallels 17. Previously, I had a version of my Catalina system running from a sparsebundle in a VM. However a recent update of my main system has rendered this useless somehow. I'm unable to find the article that explained how to set up a hard drive in the VM to boot from a sparsebundle.

    I've been wasting full days attempting to do a migration transfer to a new VM of Catalina. Because for some reason parallels is now hamstrung by how macOS views each hard drive as two drives in disc utility. Where there is a system portion and a 'data' portion. Which means I can't actually port over all the applications, and library info to make a clone of the system.

    Does anyone know how to get parallels to read the new macOS hard drive format so that it can create a working VM of a Catalina backup setup?!?

    p.s. this is an Intel Mac Pro. Not an M1.
